Season the surface of the salmon with salt, black pepper, and cayenne pepper, then set aside.

Make the glaze: combine the honey, warm water, apple cider vinegar (or lemon juice), and a pinch of salt in a bowl, stirring well to mix.

Heat an oven-safe skillet (preferably cast iron) over high heat, then add the olive oil.

Pan-fry the salmon skin side down for about 1 minute to crisp the skin.

Flip the salmon and cook for another minute, then turn it back so the skin side is facing down again. Lower the heat to medium so the glaze won't cook too fast.
