Trim the antennae and legs of the fresh prawns using kitchen scissors. Ensure the prawns are at room temperature, not too cold, before cooking.

Place the coarse sea salt in a clay pot or heavy-bottomed pan. Heat the salt over medium-low heat, stirring continuously with a wooden spoon until it is very hot and starts to crackle.

Once the salt is hot, remove about one-third of it and set aside. Spread the remaining salt evenly at the bottom of the pot.

Arrange the prepared prawns in a single layer on top of the hot salt in the pot.

Cover the pot with a lid and cook for 8-10 minutes for medium to large prawns. For smaller prawns, cook for 5-7 minutes. The prawns are cooked when smoke starts to emerge from the lid.

Carefully remove the lid and use tongs to take out the cooked prawns from the salt. Serve immediately and enjoy the crispy, sweet prawns.
