Combine the frying batter ingredients — egg white, flour, cornstarch, baking powder, ice water, oil, and salt — and whisk until smooth. Add the chicken cubes and coat evenly.

Mix the honey sesame sauce ingredients — honey, apple cider vinegar, ketchup, sesame oil, cornstarch, water, and salt — in a bowl and set aside.

Heat about 2 inches of oil over medium-high heat. Gently drop in the battered chicken one by one, spread out, and fry until golden brown. Drain on paper towels.

Transfer 2 tablespoons of the frying oil to a wok. Stir-fry the garlic until aromatic, then add the honey sesame sauce and simmer until thickened.
