Soak the lala clams in salted water for 20-30 minutes to help them purge any sand.

Scrub the clam shells with your hands or a brush, then rinse thoroughly under cold running water; discard any cracked or damaged clams.

Peel the ginger and cut into strips; seed the red chilies and cut into pieces; cut the scallion into strips.

Heat a wok or skillet over high heat and add the oil.

Once the oil is hot, add the ginger and red chilies and cook until their aromas are released.

Add the clams to the wok and stir-fry continuously for a few seconds.
