Cut the chicken meat into small cubes and set aside.

Blend all the marinade ingredients — cooking oil, lemongrass, garlic, shallots, turmeric, coriander, chili powder, salt, and sugar — in a food processor, adding a little water if needed.

Make the satay peanut sauce following the peanut sauce recipe.

Combine the chicken and marinade, mixing well, and marinate for 6 hours in the fridge or overnight. When ready, thread 3-4 pieces onto each bamboo skewer.

Grill the satay skewers for 2-3 minutes on each side until cooked through and nicely charred, basting with oil while grilling. Serve hot with peanut sauce, cucumber, and onions.
