Chop the drumsticks into two to three pieces each, Asian-style.

Turn on the Saute mode on your Instant Pot and let it heat fully so the chicken does not stick.

Add the cooking oil, then pan-sear the chicken until it turns slightly browned. Do not skip this step — if it sticks too much, sear in a non-stick skillet instead.

Add the sliced ginger and saute briefly until fragrant.

Add the soy sauce, sweet soy sauce, ground white pepper, sesame oil, and water.

Cover the pot, select Manual, and set to High pressure for 8 minutes.

When it beeps, turn the valve to Quick Release (not natural release, or the chicken overcooks). Once the valve drops, carefully remove the lid.

If the sauce is too watery, turn on Saute mode and reduce it for about 1 minute.
