In a small bowl, whip together the softened butter, minced garlic, and chopped chives to make the garlic chive butter.

Chill the garlic chive butter in the fridge to firm it up.

Pat the steak dry and season both sides generously with kosher salt and ground black pepper.

Heat an outdoor gas grill to 500°F (260°C) with the lid closed. If your grill won't reach 500°F, 450°F also works.

Place the steak over direct heat and grill the first side for 7 minutes.

Flip the steak and grill the second side for another 7 minutes. For medium-rare or well-done, move it to the side with no direct heat and close the lid until it reaches your desired doneness.

Transfer the steak to a serving platter and top with a pat of the garlic chive butter, letting it melt over the hot steak.
