Mix all the orange sauce ingredients in a bowl and whisk to combine. In another bowl, whisk all the frying batter ingredients until smooth, then add the chicken cubes and coat well.

Heat a wok or non-stick skillet with the deep-frying oil. Gently drop in the battered chicken one by one, spreading them out to prevent sticking.

Deep-fry the chicken until golden brown and crispy, then remove and drain on paper towels.

Leave 1 tablespoon of oil in the wok. Add the garlic and stir-fry until aromatic, then pour in the orange sauce and bring to a light simmer.
