
Homemade Iced Lemon Tea

Rinse 5g of Pu-erh tea leaves with a small amount of boiling water and discard the water. Then, steep the rinsed tea leaves in 240ml of fresh boiling water for 10-15 minutes to create a concentrated tea.

Rub the lemon and lime with 1 tablespoon of salt for 1-2 minutes, then rinse thoroughly under running water to reduce bitterness from the peels.

Carefully peel thin strips of zest from the lemon, avoiding the white pith. Peel 2-3 thin strips of zest from the lime.

Place the lemon and lime zests in a pot over very low heat. Gently toast them, stirring occasionally, until fragrant (about 2-3 minutes).

Add 5 tablespoons of white sugar to the pot with the toasted zests. Stir continuously over low heat until the sugar caramelizes and combines with the fruit peels.

Pour the steeped tea concentrate and 2000ml of water into the pot. Bring the mixture to a boil.

Once boiling, set a timer for 3 minutes and continue to simmer. Do not exceed 5 minutes.

After simmering, remove and discard the lemon/lime zests and tea leaves from the pot.

Add 100g of rock sugar to the hot tea and stir until completely dissolved. Let the tea cool down completely.

While the tea cools, slice the remaining peeled lemon and lime into thin rounds, removing any seeds.

Once cooled, transfer the iced lemon tea to a pitcher or bottle. Serve chilled over 1 cup of ice per serving, garnished with fresh lemon and lime slices.
