Homemade Hong Kong style chow mein pan-fried in a supreme soy sauce seasoning, just like Chinese restaurants. Fast, smoky wok-hei noodles with bean sprouts and yellow chives.

Rinse and soak the noodles in water according to the package instructions, then drain and set aside.

In a small bowl, mix the soy sauce, oyster sauce, sugar, sesame oil, dark soy sauce, Shaoxing wine and white pepper to make the seasoning. Have all ingredients ready right beside the wok — the cooking is fast.

Heat a wok over high heat until fully hot, then add the oil and let it heat up.

Loosen the noodles and add them to the wok, tossing and stirring with a pair of long chopsticks to keep them from clumping.

Add the seasoning mixture and toss with the chopsticks until every strand is evenly coated and glossy.

Add the bean sprouts and yellow chives and stir to combine, cooking just until they are heated but still crunchy, then turn off the heat.

Dish out the noodles, top with white sesame seeds, and serve immediately.
