Rinse and soak the noodles in water according to the package instructions, then drain. In a small bowl, mix all the seasoning ingredients and stir to combine well.

Heat a wok over high heat. Once fully heated, add the oil and let it heat up.

Loosen the noodles and add them to the wok, tossing with long chopsticks. Add the seasoning mixture and toss to combine well, continuing to loosen the noodles.

Add the bean sprouts and yellow chives and stir to combine. Once cooked but still crunchy, turn off the heat, dish out, top with white sesame seeds, and serve immediately.
