
Anti-Inflammatory Cauliflower Chicken Soup
A healthy, creamy-yet-light soup packed with protein and nutrients. Cauliflower is simmered with turmeric, ginger, and garlic, then partly blended for a velvety base and finished with shredded chicken and a squeeze of lemon.

Heat the olive oil in a large pot over medium heat. Sauté the onion and carrot for 4 minutes, then stir in the garlic and ginger for 30 seconds.

Add the turmeric, paprika, dried mint, and salt and pepper, stirring to coat. Add the cauliflower florets and broth, cover, bring to a boil, then reduce to a simmer for about 7 minutes until the florets are fork-tender.

Transfer about 80% of the cauliflower to a blender and puree for 1 minute until smooth. Return it to the pot with the shredded chicken, stir to combine, and adjust the salt. Garnish with an olive oil drizzle and a squeeze of lemon.
