Chop the green onions, reserving some for garnish later.

In a small bowl, combine the minced garlic, chopped green onions (not reserved), soy sauce, gochugaru, and sesame oil. Mix well to create the seasoning sauce.

Thinly slice the small onion.

Place the sliced onion in a bowl of cold water, separate the rings, then drain and wash thoroughly to remove sharpness and keep it crisp.

Preheat your broiler to 500°F (260°C).

Score the branzino fish on both sides with diagonal cuts.

Season the branzino with salt, rubbing it evenly inside and out, ensuring it gets into the scored cuts.
