
Pad Thai
Authentic Thai stir-fried rice noodles with shrimp, tofu and egg tossed in a homemade sweet-sour-savoury Pad Thai sauce, finished with bean sprouts, chives and crushed peanuts.

Boil the rice noodles per the package instructions until soft but still chewy (not mushy), then rinse under cold running water.

Mix the fish sauce, sugar, water, rice vinegar and chili powder in a small bowl until the sugar dissolves — this is the Pad Thai sauce.

Heat a skillet on high heat and add the oil.

Add the garlic and stir until aromatic.

Add the shrimp and tofu and keep stirring.

As soon as the shrimp changes color, add the noodles and stir continuously for about 30 seconds.

Push the noodles to one side of the skillet and crack the egg onto the empty side.

Break the yolk and blend it with the white, let it cook for about 30 seconds, then combine with the noodles.

Add the Pad Thai sauce and stir to coat the noodles well.

Add the bean sprouts and chives and stir until just cooked.

Stir in the crushed peanuts, turn off the heat and serve immediately with lime wedges.
