
French Onion Burgers
Seasoned ground beef patties topped with balsamic caramelized onions, crisp bacon, melted Gruyère, and a homemade horseradish aioli. All the cozy flavor of French onion soup stacked onto a brioche bun.

Make the horseradish aioli: mix the mayonnaise, horseradish, lemon juice, minced garlic, and a dash of salt in a bowl. Chill at least 30 minutes before assembling.

Sprinkle the onion soup mix over the ground beef and gently mix in with your hands without over-working. Divide into 6 portions and form ½-inch-thick patties wider than the buns, pressing a thumb indentation into the center of each.

Melt the butter in a large skillet over medium-high heat. Add the onions in an even layer and leave until they start to brown, then stir in the sugar and balsamic vinegar and season with salt and pepper. Cook, stirring occasionally, until browned, about 15 minutes.

Preheat a grill to medium-high. Grill the patties indent-side up with the lid closed for 3-4 minutes until seared and juices pool on top, then flip and cook another 3-4 minutes to 130-150°F.

Add a slice of Gruyère to each patty during the last minute of cooking. Remove to a plate and rest a few minutes before assembling.

Toast the buns and spread aioli on them. Top with a patty, bacon, caramelized onions, and arugula, then add the top bun.
