
Old Cucumber Soup with Pork Ribs

Chop the pork ribs into desired pieces and wash them thoroughly. Place the ribs in a pot with cold water (do not turn on heat yet).

Turn on high heat and bring the water to a boil. Once boiling, let it continue to boil for about 1 minute. Skim off any foam that rises to the surface.

Remove the blanched pork ribs from the pot and rinse them thoroughly under clean water, gently rubbing to remove any remaining impurities. Transfer the rinsed ribs to your main soup pot.

Prepare the old cucumber: cut off both ends, then halve it lengthwise. Quarter each half lengthwise, then use a spoon to scoop out and discard the seeds. Cut the cucumber into large chunks (the skin is kept for the soup).

Soak the dried scallops in a small bowl of water. Cut the red dates in half and remove the pits.

Add the soaked dried scallops (along with their soaking water), white peppercorns, and 1500ml of fresh water to the pot with the pork ribs.

Bring the pot to a boil over high heat. Once boiling, reduce the heat to low, cover the pot, and simmer for 30 minutes to allow the flavors to develop.

After 30 minutes, open the lid and add the old cucumber chunks, pitted red dates, and wolfberries to the pot.

Turn the heat back to high and bring the soup to a boil again. Once boiling, reduce the heat to the lowest setting, cover the pot, and simmer for another 45 minutes to 1 hour until the cucumber is tender and the flavors are fully infused.

Open the lid, add salt to taste, and stir well. Taste the soup and adjust seasoning if necessary.

Ladle the hot soup into individual bowls and serve immediately. The pork ribs can be enjoyed with a side of soy sauce and chili.
