
Malaysian Shaved Ice (Ice Kacang / ABC)
The classic Penang shaved-ice dessert: a fluffy mountain of ice drenched in brown-sugar syrup and condensed milk, piled with red beans, sweet corn, grass jelly and attap chee.

Add the brown sugar, water and red coloring to a small saucepan.

Heat over medium heat until the sugar melts and the syrup just starts to bubble, then turn off the heat.

Set the syrup aside and let it cool completely.

Shave the ice in a blender until it is completely fine and fluffy.

Transfer the shaved ice to a bowl and drizzle over 2 tablespoons of the cooled syrup.

Top with the red beans, cream-style corn, grass jelly and attap chee.

Finish with a generous drizzle of condensed milk and serve immediately.
