Break up the overnight rice with the back of a spoon to prevent clumping.

In a wok, toast the belacan over low heat until dry, aromatic and powdery.

Fry an egg until well done and set aside.

Using a mortar and pestle or mini food processor, blend the shallot, garlic, red chili and toasted belacan into a paste.

Heat a wok and add the oil.

Add the flavoring paste and stir-fry until aromatic and the oil separates.

Add the rice and mix well with the paste.

Add the kecap manis and palm sugar and continue stir-frying until everything is well blended.

Dish out the nasi goreng, top with the fried egg and serve immediately.
