
Salt and Pepper King Oyster Mushrooms
This recipe transforms plain king oyster mushrooms into a flavorful and aromatic dish with a unique texture. By tearing the mushrooms and blanching them, then pan-frying them until golden and finally stir-frying with a homemade salt and pepper seasoning, garlic, chili, and scallions, the mushrooms absorb all the delicious flavors and achieve a satisfying chewiness. Tear the king oyster mushrooms into strips. If difficult, make a small cut with a knife first, then tear along the grain.

Chop the scallions, separating the white and green parts. Mince the garlic and chop the chili.

In a small dry pan, add white peppercorns, Sichuan peppercorns, and salt. Dry roast over medium heat until fragrant and the peppercorns appear 'loose' and dry. Turn off the heat.

Transfer the roasted spices and salt to a mortar and pestle. Pound until the peppercorns burst, then grind into a fine powder. Set aside.

Bring a pot of water to a rolling boil. Add the torn king oyster mushrooms and blanch on high heat until they soften, about 2-3 minutes.

Immediately remove the blanched mushrooms and transfer them to a bowl of cold water to cool rapidly.

Squeeze out as much excess water as possible from the cooled mushrooms. This step is crucial for achieving the desired texture and allowing the mushrooms to absorb flavor.

Heat a wok over high heat. Add cooking oil and heat until it's shimmering and slightly smoking. Add the squeezed king oyster mushrooms and pan-fry, stirring constantly, until they are golden brown and slightly crispy. This will take about 5-7 minutes.
