Classic New England lobster rolls filled with juicy, succulent lobster meat dressed in a light honey-lemon mayo, stuffed into buttery toasted buns.

Bring the water to a boil in a large pot, using about 1 1/2 cups of water per pound of lobster.

Add the live lobsters, cover, and cook until they turn bright red, about 8 minutes.

Remove the lobster and set aside to cool.

Crack the shells and pick the meat from the tail and claws.

Cut the lobster meat into bite-sized pieces.

In a bowl, combine the mayonnaise, honey, lemon juice, salt, black pepper, and chives to make the dressing.

Fold the lobster meat into the dressing until evenly coated and set aside.

Trim about 1/4 inch off both sides of each hot dog bun. New England split-top buns are ideal if you can find them.

Spread butter on the cut sides of the buns.

Heat a skillet over medium heat and toast the buttered sides of the buns until golden brown and crusty.
