Cut each block of soft tofu in half, creating 4 rectangular pieces. Lightly sprinkle and rub salt on all sides of the tofu pieces.

Finely chop the scallions, separating the white and green parts. Finely chop the fresh shiitake mushrooms. Mince the garlic cloves.

Heat 2 cups of cooking oil in a wok over high heat until it reaches approximately 180°C (350°F). Carefully place the salted tofu pieces into the hot oil, ensuring not to overcrowd the wok. Ladle hot oil over the tofu to ensure even cooking.

Fry the tofu until all sides are golden brown and crispy. Remove the fried tofu from the wok and drain excess oil. Arrange the crispy tofu on a serving plate.

Pour out most of the oil from the wok, leaving about 1 tablespoon. Add the minced pork to the wok and stir-fry over medium-low heat until the pork renders its fat and turns light brown.

Add the chopped shiitake mushrooms, minced garlic, and the white parts of the scallions to the wok. Continue to stir-fry until fragrant.

Season the pork and mushroom mixture with oyster sauce, fermented bean paste, light soy sauce, dark soy sauce, and white pepper powder. Stir-fry until all ingredients are well combined and fragrant.
