
Old Hen Herbal Soup
A traditional Chinese herbal soup made with old hen, codonopsis root, red dates, goji berries, and shiitake mushrooms, simmered to extract rich flavors and nutrients.

Prepare the old hen: remove the head, feet (cut off nails), and internal organs. Rinse thoroughly under running water to remove any blood.

If you prefer less oil in your soup, remove the skin and excess fat from the chicken.

Chop the chicken into bite-sized pieces.

Slice 3 pieces of ginger.

Place the chopped chicken pieces and 3 slices of ginger into a pot with cold water. Bring to a boil over high heat.

Once boiling, remove any scum that floats to the surface. Continue to boil for 2-3 minutes.

Remove the blanched chicken pieces and ginger from the pot and transfer them to a bowl of clean, cold water. Rinse them briefly.

Cut the codonopsis root into smaller segments. Rinse the red dates and dried shiitake mushrooms.

Briefly blanch the dried shiitake mushrooms in hot water for about 15 seconds, then drain.

Place the blanched chicken, codonopsis root, red dates, and 3 fresh slices of ginger into a clay pot. Add 3000ml of water.

Bring the soup to a rolling boil over high heat. Once boiling, let it boil for 1 minute.

Turn off the heat, cover the pot, and immediately reduce the heat to the lowest setting. Simmer for 1 to 1.5 hours.

After simmering, add the blanched shiitake mushrooms to the soup.

Add the goji berries to the soup. Turn off the heat immediately, cover the pot, and let it sit for 10-15 minutes to allow the flavors to meld.

Season the soup with salt to taste. Stir well and serve hot.
