
Chili Lime Grilled Chicken

Rinse the chicken thighs, remove the bones (leaving the skin on), and pat them dry with paper towels. Set aside.

In a large bowl, whisk together the lime juice, lime zest, olive oil, cilantro, jalapeño, garlic, honey, salt, and chili powder until the marinade is well combined.

Add the chicken to the marinade and stir to coat evenly.

Cover and marinate the chicken for 2 hours.

Fire up the grill and brush a little oil on the grate.

Spoon some of the garlic, cilantro, and jalapeño from the marinade on top of the chicken, then place it on the grill.

Grill over medium heat until golden brown and charred on both sides, about 5 to 7 minutes per side, until the internal temperature reaches 165°F. Serve immediately. Alternatively, use a grill pan or bake at 400°F for 20 to 25 minutes until the skin is browned and charred.
