Marinate the chicken cubes with the marinade ingredients — soy sauce, salt, Shaoxing wine, cornstarch, and water — for 15 minutes. Meanwhile, mix the sauce ingredients in a separate bowl and set aside.

Heat a wok with 2 tablespoons of oil. Stir-fry the marinated chicken until half-cooked and the surface turns white, then transfer to a plate and set aside.
