Wash the pork ribs thoroughly with salt for 1-2 minutes, then rinse and soak them in hot water for 5-10 minutes to remove any blood and impurities. Drain well.

Place the cleaned pork ribs and a small piece of ginger into a pot with cold water. Bring to a boil over high heat.

Once the water boils, continue to cook for another minute. Then, remove the ribs and set aside.

Slice the remaining ginger into thin pieces. Prepare the rock sugar.

Heat a pan with cooking oil over medium-high heat. Add the ginger slices and fry until fragrant.

Add the blanched pork ribs to the pan and sear until they are slightly browned and fragrant on all sides.

Add the rock sugar to the pan and stir-fry with the ribs until the sugar caramelizes and coats the ribs, giving them a beautiful color.

Deglaze the pan by adding Shaoxing wine, scraping any browned bits from the bottom of the pan.

Pour in enough water to just cover the pork ribs.

Add light soy sauce, oyster sauce, and tomato sauce to the pan. Stir to combine.

Reduce the heat to low, cover the pan, and simmer the ribs for 45 minutes until tender.

After 45 minutes, remove the lid and increase the heat to high. Continue to cook, stirring occasionally, to reduce the sauce until it thickens.

Add a few drops of Lee Kum Kee Worcestershire sauce and honey. Stir well to incorporate and continue reducing until the sauce is thick and glossy, coating the ribs beautifully.
