
Thai Peanut Sauce
An easy, authentic Thai peanut sauce made with creamy peanut butter, coconut milk and red curry paste. Perfect for dipping satay, drizzling over noodles or mixing into salads.

Add the peanut butter, coconut milk, red curry paste, apple cider vinegar, sugar and salt to a saucepan.

Set the saucepan over low heat and whisk the ingredients together quickly. Gentle heat prevents burning or separating.

Continue whisking until the sauce is smooth and all the ingredients are well combined. Add a splash more coconut milk for a thinner sauce, or less for a thicker one.

As soon as the peanut sauce starts to simmer and bubble, turn off the heat.

Transfer the sauce to a bowl and top with the ground peanuts. Taste and adjust sugar or salt as desired. Leftovers keep in the fridge for up to a week.
