Slice the pork loin into 1 cm thick pieces. Ensure your knife is sharp for clean cuts.

Tenderize both sides of each pork slice using a meat mallet (the side with spikes) or the back of a cleaver. Pound until the meat is slightly loosened but not completely shredded.

Prepare the aromatics: Pound the ginger until minced. Smash the garlic cloves. Halve the red onion and slice it into thick strips. Remove the outer layers of the lemongrass, smash the stalks, then slice them into thin strips.

In a bowl, combine the salt, black pepper, fish sauce, dark soy sauce, and 1 tbsp of cooking oil. Mix well until thoroughly combined.

Add the tenderized pork, minced ginger, smashed garlic, and sliced red onion to the seasoning mixture. Mix thoroughly by hand, ensuring every piece of pork is coated.

Add the sliced lemongrass to the pork mixture. Mix again by hand until the lemongrass is evenly distributed and adheres to the pork.

Cover the bowl with plastic wrap, ensuring the air is pressed out. Refrigerate for at least 24 hours to allow the flavors to fully penetrate the pork. Do not freeze.

After marination, remove the pork from the refrigerator and let it sit at room temperature for a while before cooking.

Heat a metal pan (preferably an iron wok) over high heat until it starts to smoke. This prevents sticking.

Reduce the heat to low, then add 2 tbsp of cooking oil to the hot pan. Swirl to coat the pan.

Place the marinated pork chops, along with the lemongrass strips, into the pan. Immediately turn the heat back to high.

Sear the pork for approximately 1 minute per side. Use a potato masher or spatula to press down on the pork while it cooks to ensure even browning and contact with the pan.

To check for doneness, insert a thin, pointed object (like a chopstick) into the thickest part of the pork. If it goes in easily, the pork is cooked through.
