
Char Siu (Chinese BBQ Pork)
Cantonese-style barbecue pork with sweet, sticky, mahogany edges and juicy centers. Marinated overnight in a classic char siu sauce, then roasted and broiled to a caramelized char. Just like Chinatown.

In a large bowl, mix all the char siu sauce ingredients, then add the garlic and pork belly and marinate overnight in the fridge.

The next day, heat the oven to 400°F (200°C). Place the pork belly on a wire rack or foil-lined pan and roast for 15 minutes.

Turn the pork over, brush with the remaining char siu sauce, and roast another 15 minutes.

Set the oven to broil and broil each side of the pork for about 1 minute until nicely charred (dark color is normal).

Slice the char siu into thin bite-size pieces and serve immediately with steamed rice and the remaining sauce (heat it to a simmer first if you like).
