Combine ground bean sauce, hoisin sauce, tomato sauce, red fermented bean curd, black pepper, five spice powder, garlic salt, sugar, and cooking wine in a bowl. Crush the red fermented bean curd and mix everything until smooth. Taste and adjust if needed.
2:55 timer - 2
Finely mince the shallots and ginger. Add them to the marinade and mix well.
0:32 timer - 3
Pat the chicken drumsticks dry with paper towels. Using a small knife, jab the thickest part of each drumstick a few times to help the marinade penetrate and cook faster.
1:11 timer - 4
Pour the prepared marinade over the chicken drumsticks in a large bowl. Mix well to ensure each drumstick is evenly coated. Cover the bowl with cling wrap and marinate for 1.5-2 hours at room temperature, or longer (overnight) in the refrigerator.
90:00 timer - 5
Line a baking tray with aluminum foil and place a wire rack on top. This allows for airflow, helping the chicken cook through faster on both sides.
0:19 timer - 6
Preheat the oven to 385°F (196°C). Place the marinated chicken drumsticks evenly spaced on the prepared baking rack. Insert a wireless probe meat thermometer into the thickest part of one drumstick, avoiding the bone, to monitor the internal temperature.
0:30 timer - 7
Bake the chicken for 30 minutes at 385°F (196°C).
30:00 timer - 8
After 30 minutes, carefully remove the chicken from the oven. Flip each drumstick to the other side using tongs. Brush a thin layer of oil (about 1 tsp total) on the drumsticks for a glossy finish.
0:25 timer - 9
Return the chicken to the oven. Increase the oven temperature to 390°F (199°C) and bake for another 15 minutes.
15:00 timer - 10
Carefully remove the chicken from the oven. Brush about 1 tbsp of honey on both sides of each drumstick.
0:10 timer - 11
Return the chicken to the oven for 3-5 minutes to caramelize the honey, ensuring the skin gets crispy and golden.
5:00 timer - 12
Once done, remove the probes (if used) and arrange the Char Siu Chicken Drumsticks on a plate. Serve immediately and enjoy!
