Clean the crabs and cut them in half, discarding the spongy 'dead man's fingers'.

Smash the claws with a cleaver so the seasonings can penetrate.

Deep-fry the crab until half-cooked, then drain and set aside.

Heat a wok and melt the butter.

Add the shallots, garlic, mashed salted soybeans, ground dried prawns, black pepper, curry leaves and bird's eye chilies.

Sauté until fragrant.

Add the crab along with the black soy sauce, sugar and oyster sauce.
