Instructions
- 1
Rinse the cucumber thoroughly under cold running water.
- 2
Slice the cucumber into bite-sized pieces. If your cucumber is large, cut it into half-moons so it is easier to eat and the dressing sticks better.
- 3
Place the cucumber in a bowl, sprinkle over the salt, and stir gently to combine. Salting draws out excess water so the cucumber stays extra crisp.
- 4
Chill the salted cucumber in the refrigerator for 15 minutes.

Drain the released water by letting the cucumbers sit in a colander or strainer. Do not rinse the salt off, as it keeps the seasoning balanced.
- 6
In a separate bowl, combine the minced garlic, apple cider vinegar, sugar, chili powder, chili oil, and sesame oil.
- 7
Stir the dressing well, making sure the sugar is completely dissolved.
- 8
Add the drained cucumber to the dressing and toss well until every piece is coated.
- 9
Top with sesame seeds and serve immediately.
