Marinate the chicken with the soy sauce, Shaoxing wine, and 1 tablespoon cornstarch for 30 minutes.

Mix all the lemon sauce ingredients — water, lemon juice, sugar, cornstarch, and salt — and set aside.

Add the cornstarch and all-purpose flour to the chicken, stirring to coat each piece evenly.

Heat about 2 inches of oil in a wok. Deep-fry the chicken until golden brown, then transfer to a paper towel-lined plate to drain.
