Combine 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon yellow mustard, 2 tablespoons sweet pickle relish, 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1 teaspoon cider vinegar, and 1/4 teaspoon cayenne pepper in a bowl. Mix thoroughly until well combined. Refrigerate until ready to use.

Prepare the burger toppings by having 1 cup of Funyuns, 3 dill pickle slices, 1/4 cup thinly sliced red onion, and 1 cup shredded iceberg lettuce ready.

Divide 10 oz of ground beef into two equal portions. Place each portion between two sheets of plastic wrap and use a heavy object (like a pot) to smash them flat into thin patties.

Slice the sesame seed burger bun in half. Spread a thin layer of the prepared sauce on the cut sides of both bun halves.

Heat a cast iron pan over medium-high heat. Place the bun halves, sauce-side down, in the hot pan and toast until golden brown and slightly crispy. Remove from the pan and set aside.

Increase the heat to high. Place the two smashed beef patties in the hot pan. Press down firmly with a spatula to ensure good contact with the pan for a crispy crust. Season generously with 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper.

Cook the patties for about 2 minutes, or until the bottom edge of the meat loses its raw red color and a crispy crust forms. Loosen the edges with a spatula, then carefully flip the patties.

Immediately place a slice of white cheddar cheese on each flipped patty. Cook for another minute or so until the cheese is melted and the patties are cooked through. Transfer the cooked patties to a plate and let them rest for 1 minute.

To assemble the burger: Spread a generous amount of the prepared sauce on the bottom bun.

Layer the thinly sliced red onion on top of the sauce on the bottom bun.
