
Chow Mein
An easy, Chinatown-style chow mein with Chinese egg noodles stir-fried with chicken, shrimp, and crisp vegetables in a savory soy-oyster sauce.

Soak the chow mein noodles in cold water for about 5 minutes, rinsing a few times until the water runs clear and the noodles soften. Don't over-soak or they'll turn soggy.

Drain the noodles well in a colander so they are dry and won't clump.

In a small bowl, combine the soy sauce, oyster sauce, sugar, dark soy sauce, and water to make the chow mein sauce. Set aside.

Heat a wok or skillet over high heat with the cooking oil — be generous with the oil.

Add the minced garlic and stir-fry until light brown and aromatic.

Add the chicken strips and shrimp and stir-fry until they are about half cooked.

Add the shredded cabbage and carrot and stir-fry quickly.

Add the drained noodles and the sauce mixture. Toss and stir-fry — using chopsticks helps loosen the noodles and keeps them from clumping — until the noodles are well coated and cooked through.

Add the scallions, give a few final stirs, dish out, and serve hot.
