
Turmeric Chicken
A quick Malaysian stir-fry of chicken marinated in turmeric and oyster sauce, cooked with onion, red chili, and French beans.

Cut the chicken (breast or thigh) into strips if not already done.

In a bowl, combine the chicken strips with the turmeric powder and oyster sauce.

Let the chicken marinate for 15 minutes so the turmeric's yellow color and aroma soak in.

While the chicken marinates, slice the onion, deseed and cut the red chili into thick strips, and trim the French beans into 2-inch pieces.

Heat a wok over high heat and add the oil.

Stir-fry the sliced onion until fragrant and aromatic.

Add the marinated chicken and stir-fry quickly a few times to sear.

Add the red chili strips and French beans, and stir well to combine with the chicken and onion.

Pour in the water and continue cooking, stirring, to help the chicken cook through.

Add the sugar and salt to taste, and keep stirring until the chicken is fully cooked through.
