In a bowl, combine the cubed chicken with the smoked paprika, cumin, salt and black pepper. Mix well until the meat is fully coated.

Let the chicken marinate for 10 minutes. (Do not add the lime juice now — its acid would make the chicken texture mushy.)

Heat a cast-iron skillet over medium-high heat, then add the oil and butter.

Add the sliced onions and cook, stirring occasionally, for 2-3 minutes until softened and lightly caramelized.

Add the marinated chicken and stir well. Spread it out so it hits the hot metal directly rather than piling in the center, which would drop the pan temperature.

Cook for 3-4 minutes until the surface of the chicken turns opaque.

Add the sliced bell peppers and stir to combine, cooking another 3-4 minutes until the chicken is cooked through and the peppers are tender-crisp.
